Mini Pumpkin Muffins

Monday night because of Hurricane Sandy we were without power.  Getting out of bed in the dark and in the cold was not a pleasurable experience, especially knowing that my coffee maker was not working.  But being greeted by these little gems made up for the inconveniences a tad.
The recipe was posted on Once A Month Mom back in early September and I have been obsessing about them ever since.  Finally I got around to baking them on the weekend and two days later they are still outstanding.  I altered the original recipe ever so slightly, to make it a little bit more healthy, but that did not alter the flavour at all.  The trouble is stopping at only a few at a  time.  I find them very similar to Tim Horton’s cinnamon sugar tim bits but these taste better and less fake like a lot of commercial bakery goods taste.
Once A Month Mom  is a brilliant web site by the way.  They have many different monthly menus for batch freezer cooking and I often follow both the whole foods and the vegetarian plans.  Most of the recipes are easy to prepare and they are often fun and inventive.  I highly recommend the site to busy moms or anyone interested in freezer cooking and only cooking once a month.
On to the recipe!
Pumpkin Mini Muffins

They are so adorable!
1 3/4 cup whole wheat flour

2 teaspoon baking powder

1/4 teaspoon sea salt

2 teaspoon pumpkin pie spice

1/3 cup vegetable oil

1/2 cup brown sugar

2 large eggs

1 teaspoon vanilla

3/4 cup pumpkin puree

1/2 cup organic milk

8 tablespoons butter

2/3 cups organic sugar

2 tablespoon cinnamon


Preheat oven to 350 degrees.


Whisk together flour, baking powder, salt, pumpkin pie spice in a medium bowl.


In separate large bowl, combine oil, brown sugar, egg, vanilla, pumpkin and milk until smooth.


Add dry ingredients to wet ingredients, stirring just to incorporate ingredients. Do not overmix.


Divide evenly into greased mini muffin tin. Bake for 10-15 minutes or until golden brown. Allow muffins to cool for 2 minutes.


Melt butter in small bowl, combine cinnamon and sugar in another small bowl. Dip each muffin in butter and then roll in cinnamon-sugar mixture.
